Panda’s Dukan Egg Pie

A colleague recently provided this Dukan egg pie recipe (it’s his recipe, not mine… I’m merely re-posting it here so I can make it again some day…). I made it and it’s really nice, so I thought I’d post the recipe. Enjoy!

Ingredients (serves 6 – 8):

  • 8 eggs
  • 12 tablespoons oat bran
  • 1 cup low-fat cottage cheese
  • 1 cup low-fat milk
  • 200 grams ham; chopped (or try salami, roast beef, pre-cooked sausage – anything you like!)
  • 1 red onion; diced
  • Salt, pepper & herbs to taste

  1. Preheat oven to 180 degrees Celsius.
  2. Lightly grease a 23cm springform cake tin (or a ~30cm shallow pie / quiche / slide baking dish or tray).
  3. Place all ingredients into a bowl and mix well with a wooden spoon or whisk. Mixture will appear quite runny; that’s fine.
  4. Tip into the baking dish.
  5. Bake for 60 minutes (or until the middle is no longer runny).
